Amazing African beef and mango curry

We made this curry for a group of friends last week. The recipe is adapted from: After rave reviews, we were forced to share the secret.

1 lb ground beef

1 extra large onion (diced)
1 lb mango (1/2 inch cubed)
2 Tbsp tomato sauce

2 Tbsp coconut oil
4 Tbsp extra virgin olive oil

16 FL oz rice milk (plain, not vanilla)

1 tsp turmeric powder
1 tsp cumin powder
1 tsp ground coriander
1/2 tsp Chinese ginger
1 pinch Sandia peppers
1 pinch cayenne pepper
Sea salt

In a medium pan, heat half of the oil and brown the ground beef (salt to taste). Use a slotted spoon to remove the meat once finished and set aside.

Add the remaining oil, the onions and all spices, saut̩ for 5 Р10 minutes, at least until the onions are tender. Add the tomato sauce, mango, rice milk and all the meat. Cover and cook on medium for 20 mins or until the meat is tender and the sauce is reduced and thick.

Serve with basmati rice.
