Nearly vegan quiche

Nearly vegan quiche and hydrangea arrangement

If you like “the vegan idea,” but are terrified of missing out on all that is wonderfully tasty about many of the “animals we typically eat,” try this halfway point recipe. We’ve minimized the use of animal byproducts by substituting them for “delightfully healthy alternatives.”

Ingredients:
The quiche uses the “simple pie crust” recipe and the following fillings:
-4 [chia eggs]
-1/8 lb [manchego] sliced or shredded
-1 medium onion (diced)
-3 Tbsp [oven-dried tomatoes]
-1/2 cup shelled edamame

Directions:
1. Cook the bison using your favorite method (salting as required; we use [pink Himalayan salt])
2. Distribute the [oven-dried tomatoes] on the “Super Easy Whole Wheat Crust”
3. Place the cheese and basil leaves in an attractive pattern
4. Cook for 35 mins at 350°
5. Enjoy!

Bison wonder pizza

Our little one picked this recipe early one Sunday morning, long before it was time for lunch. We had recently purchased some bison and were looking for unique ways to use it. This pizza recipe is super simple to follow, easy to make, and probably pretty good for you.

Ingredients:
The pizza uses the “Super Easy Whole Wheat Crust” recipe and the following toppings:
-1/4 lb [ground bison]
-1/8 lb [manchego] sliced or shredded
-1 medium onion (diced)
-3 Tbsp [oven-dried tomatoes]

Directions:
1. Cook the bison using your favorite method (salting as required; we use [pink Himalayan salt])
2. Distribute the [oven-dried tomatoes] on the “Super Easy Whole Wheat Crust”
3. Spread the cheese and onions in an attractive pattern
4. Cook for 20 mins at 400°
5. Enjoy!

Amazing African beef and mango curry

We made this curry for a group of friends last week. The recipe is adapted from: http://www.food24.com/Recipes/Mango-and-beef-curry-20130109. After rave reviews, we were forced to share the secret.
Enjoy!

Ingredients:
1 lb ground beef

1 extra large onion (diced)
1 lb mango (1/2 inch cubed)
2 Tbsp tomato sauce

2 Tbsp coconut oil
4 Tbsp extra virgin olive oil

16 FL oz rice milk (plain, not vanilla)

1 tsp turmeric powder
1 tsp cumin powder
1 tsp ground coriander
1/2 tsp Chinese ginger
1 pinch Sandia peppers
1 pinch cayenne pepper
Sea salt

Directions
In a medium pan, heat half of the oil and brown the ground beef (salt to taste). Use a slotted spoon to remove the meat once finished and set aside.

Add the remaining oil, the onions and all spices, sauté for 5 – 10 minutes, at least until the onions are tender. Add the tomato sauce, mango, rice milk and all the meat. Cover and cook on medium for 20 mins or until the meat is tender and the sauce is reduced and thick.

Serve with basmati rice.
